Step 1

Brush the orange under warm water and dry it. Remove the zest with a vegetable peeler (without taking the bitter white part), then cut it into fine sticks.

Step 2

Beat the egg whites until stiff with an electric mixer. Pour the honey into a saucepan with the lemon juice and a spoonful of water. Boil for 3 minutes, pour over the egg whites while whisking vigorously, until completely cooled.

Step 3

Break chocolate eggs into large pieces and fill with honey meringue using a piping bag or spoon, rinsed, drained and stemmed strawberry (or raspberry) segments and zest.

Conclusion

Our advice : Cook the syrup until a drop dipped in ice water falls to the bottom and forms a ball.
